Paleo Apple Muffins

 



This is one of my families favorite paleo muffin recipes.  It is a staple whenever we travel for long weekends of soccer tournaments.  Great for snacking and breakfasts on the run. It is super moist and with only a handful of ingredients, very easy to make.


Ingredients:

  • 2 cups almond flour
  • 1/2 tsp baking soda
  • 1/8 tsp sea salt
  • 2 tsp cinnamon
  • 1 large apple grated and drained
  • 1 tbs lemon juice
  • 3 eggs
  • 1/4 cup honey
  • 2 tbs coconut oil or ghee

Instructions:

  1. Preheat oven to 325 degrees.  Grease or line a muffin pan.
  2. Combine dry ingredients in a large bowl.  
  3. Toss the grated apple with lemon juice in a medium bowl.  Add remaining wet ingredients and combine. 
  4.  Stir wet ingredients into dry ingredients.
  5. Fill muffin cups 3/4 full.
  6. Bake for 20-25 minutes until golden brown and toothpick inserted in center comes out clean.
  7. Cool on wire wrack.
