Paleo Apple Muffins
This is one of my families favorite paleo muffin recipes. It is a staple whenever we travel for long weekends of soccer tournaments. Great for snacking and breakfasts on the run. It is super moist and with only a handful of ingredients, very easy to make.
Ingredients:
- 2 cups almond flour
- 1/2 tsp baking soda
- 1/8 tsp sea salt
- 2 tsp cinnamon
- 1 large apple grated and drained
- 1 tbs lemon juice
- 3 eggs
- 1/4 cup honey
- 2 tbs coconut oil or ghee
Instructions:
- Preheat oven to 325 degrees. Grease or line a muffin pan.
- Combine dry ingredients in a large bowl.
- Toss the grated apple with lemon juice in a medium bowl. Add remaining wet ingredients and combine.
- Stir wet ingredients into dry ingredients.
- Fill muffin cups 3/4 full.
- Bake for 20-25 minutes until golden brown and toothpick inserted in center comes out clean.
- Cool on wire wrack.
