Sweet and Sour Meatballs (gluten, dairy, refined sugar free)
This recipe is requested by my son roughly every other day. So it's easy to say it is his favorite meal! It is incredibly simple to make and prepare ahead of time for those busy nights. This recipe does have a sauce that is ketchup based and it is something we usually make from scratch ahead of time. Ketchup is one of those foods that is loaded with sugar and it is so simple to make at home and the health benefits are outstanding. When I am in a pinch and out of ketchup I will keep this brand in my pantry for those emergencies.
It is organic and only sweetened with agave nectar. We typically stay away from agave but having this ketchup on hand has saved us a few times!
I typically make these with ground turkey burger but it tastes great with ground beef as well. We serve them on top of gluten free noodles, but for a paleo version it would taste great on cauliflower rice.
Ingredients:
Meatballs:
- 1 lb ground beef or turkey
- 1/2 cup oatmeal
- sprinkle of minced onion
- 1/4 cup non-dairy milk
- 1 egg
- sprinkle of parsley
- sprinkle of pepper
Sauce:
- 1 cup ketchup
- 1/4 cup white vinegar
- 1/4 cup water
- 1/2 cup coconut sugar/nectar
- 1/4 tsp cinnamon
- 1/4 tsp allspice
- 1/4 tsp onion salt
Directions:
- Mix all of the meatball ingredients together in a large bowl.
- Roll out into balls and place on a greased baking pan.
- Bake at 450 degrees for 5 minutes. Turn, then bake for 5 additional minutes.
- Mix sauce ingredients together in a large microwaveable dish.
- Stir in cooked meatballs.
- Cook in microwave on high for 6 minutes. Stir, then cook for 3 more minutes.
- Enjoy!
