Maple Roasted Brussels Sprouts
If you are looking for a vegetable side dish to win over even the pickiest of eaters then look no further. This recipe is sure to please everyone. I was never a huge brussels sprouts fan growing up but something about the combination of bacon and sweet potatoes is so delicious. I recently took this dish to a family gathering and it was devoured with not a single brussels sprout left in sight! I hope you enjoy these roasted veggies as much as we do.
Ingredients:
- 2 lbs sweet potatoes (cut into 1 inch cubes)
- 1 1/2 lbs brussels sprouts trimmed and halved
- 1 1/2 cups onion roughly chopped
- 3 Tbs olive oil
- 3 Tbs maple syrup
- salt and pepper
- 4 strips thick-cut bacon
Instructions:
- Preheat oven to 400 degrees and oil two large rimmed baking sheets with olive oil.
- Place cubed sweet potatoes, brussels sprouts and chopped onion in large bowl and toss with the olive oil and maple syrup. Mix well so all the vegetables are coated.
- Divide the veggies between the two oiled baking sheets, spreading out in a single layer, and trying not to overcrowd. Sprinkle with salt and pepper.
- Bake for 15 minutes, stir around and bake for an additional 10-15 minutes until the veggies are fork tender.
- Cook the bacon per your preferred method. (I use the oven at the same time my veggies are cooking!)
- Transfer all the veggies into a large bowl and crumble the bacon over the top.
- Mix well and devour!
