Chunky Monkey Paleo Granola




A family member introduced me to this granola recipe and we have made it countless times because it is that good.  I absolutely love that it is thrown together in a crock pot.  It's pretty versatile as far as the type of nuts you prefer.  I typically use cashews and either walnuts or pecans.  I also use unsweetened banana chips and Lily's brand chocolate chips to cut down on the refined sugar.  


Ingredients:

  • 2 cups raw walnuts ( halves or coarsely chopped)
  • 1 cup raw cashews
  • 1 cup unsweetened coconut flakes ( big flakes, not shredded)
  • 1/3 cup coconut sugar
  • 1 1/2 Tbs butter (cut into slices) or 2 to 3 Tbs coconut oil
  • 1 tsp vanilla extract
  • 6 ounces unsweetened banana chips
  • 1/2 to 2/3 cup dark chocolate chips ( I use Lily's brand)


Instructions:

  1. Place nuts, coconut sugar, vanilla, and butter slices in a crock pot.  Mix together and place on high for 45-60 minutes. Stir a few times, checking to make sure coconut flakes do not burn.  Reduce to low after 45 minutes if flakes are cooking faster or browning.
  2. Turn to low and continue cooking for an additional 20-30 minutes.
  3. Remove and place contents of crockpot on parchment paper to cool for at least 15 minutes.
  4. Add in the chocolate chips and banana chips.
  5. Mix together.
  6. Store in airtight container.
