Belgian Waffles
These waffles are a quick and easy way to make everyone happy for breakfast! They are so tasty and a much healthier option than a traditional Belgian waffle. The combination of the almond and tapioca flour give it the perfect texture, while still making it gluten and grain-free. This recipe for us makes approximately 3 large waffles so I would suggest doubling or even tripling the recipe depending on how many mouths you need to feed. I hope you enjoy these waffles because they are truly our favorite!
Ingredients:
- 1 tbs melted butter or avocado oil, for the waffle maker
- 1/2 cup almond flour
- 1/2 cup tapioca flour
- 1 tsp baking powder
- pinch of sea salt
- 2 large eggs
- 1/4 cup unsweetened applesauce
- 1 1/2 tsp pure maple syrup
- 1/2 tsp vanilla extract
Directions:
- Preheat the waffle maker and brush it liberally with melted butter or oil.
- Whisk together the almond flour, tapioca flour, baking powder and salt in a mixing bowl.
- Add the eggs, applesauce and vanilla.
- Mix to combine.
- Pour the batter in the waffle maker and cook until done, following the directions of your waffle maker.
- Serve the waffles with butter and maple syrup! You can store leftovers in the fridge for up to 1 week.
