Belgian Waffles



These waffles are a quick and easy way to make everyone happy for breakfast!  They are so tasty and a much healthier option than a traditional Belgian waffle.  The combination of the almond and tapioca flour give it the perfect texture, while still making it gluten and grain-free.  This recipe for us makes approximately 3 large waffles so I would suggest doubling or even tripling the recipe depending on how many mouths you need to feed.  I hope you enjoy these waffles because they are truly our favorite!

Ingredients:
  • 1 tbs melted butter or avocado oil, for the waffle maker
  • 1/2 cup almond flour
  • 1/2 cup tapioca flour
  • 1 tsp baking powder
  • pinch of sea salt
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • 1 1/2 tsp pure maple syrup
  • 1/2 tsp vanilla extract


Directions:

  1. Preheat the waffle maker and brush it liberally with melted butter or oil.
  2. Whisk together the almond flour, tapioca flour, baking powder and salt in a mixing bowl.
  3. Add the eggs, applesauce and vanilla. 
  4. Mix to combine.
  5. Pour the batter in the waffle maker and cook until done, following the directions of your waffle maker.
  6. Serve the waffles with butter and maple syrup! You can store leftovers in the fridge for up to 1 week.
