Paleo Peppermint Patties
These peppermint patties are so incredibly easy to make and even easier to eat! My husband couldn't stop eating them. He isn't a picky eater and always very willing to try my new recipes so I can't always tell how much he really likes them. It was pretty obvious with these since he had no self control! They are mounds of yummy peppermint dipped in chocolate. I was surprised by how well they lasted in the fridge and could easily be made ahead of time.
Ingredients:
½ cup coconut oil, melted
¼ cup raw honey or maple syrup
½-1 teaspoon organic peppermint extract
½ to 1 cup chocolate chips (We use Lilly's brand- sweetened with stevia)

- Combine coconut oil, sweetener, and peppermint extract in a pint mason jar
- Using a hand blender whisk until smooth
- Refrigerate mixture for 2 hours until firm
- Use a 1.5 teaspoon ice cream scoop to measure mixture onto a parchment paper lined plate
- Wet your hands and flatten each ball into a patty
- Place plate in freezer for 30 minutes until patties are firm
- Melt chocolate over very low heat and allow to cool
- Dip patties into melted chocolate using a dipping tool
- Freeze patties to harden
- Serve
