No Bake Energy Bites
These energy bites have become a weekly staple in our house. I have tried many recipes like these in the past but none were nearly as good. The recipe is so versatile and you have many different options to add in your favorites! I enjoy them best with peanut butter but for anyone who can't tolerate that, almond butter would be an excellent choice too. They also have added chocolate chips. We use a brand that is sweetened with only stevia but they are also just as good if you leave out the chocolate chips. These babies are also loaded with healthy flax seed and chia seed!
We love taking these as snacks but they have also done in a pinch for my breakfast when I am in a hurry.

1 cup (dry) oatmeal (I used old-fashioned oats)
2/3 cup toasted coconut flakes
1/2 cup peanut butter
1/2 cup ground flax seed
1/2 cup chocolate chips (or vegan chocolate chips)
1/3 cup honey or agave nectar
1 tablespoon chia seeds (optional)
1 teaspoon vanilla extract
We love taking these as snacks but they have also done in a pinch for my breakfast when I am in a hurry.

Directions:
- Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
- Once chilled, roll into balls of whatever size you would like. (Mine were about 1" in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
- Makes about 20-25 balls.
