Pumpkin Spice Cookies with Vanilla Cinnamon Icing
This cookie has been our favorite for the past couple of months. I am sure it has something to do with the fact that they are pumpkin and I am a sucker for that! They are pretty simple to make and even easier to eat! My son loves stealing them before I have even frosted them.
Ingredients:

- 2 1/2 cups blanched almond flour
- 2 tbs coconut flour
- 1 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp baking soda
- 1/2 tsp nutmeg
- 1/4 tsp cardamom
- dash of sea salt
- 1/3 cup pure maple syrup
- 1/2 cup pumpkin puree
- 1 egg
- 1 tsp vanilla
Icing
- 1 tbs raw honey
- 2 tbs coconut butter
- 2 tbs coconut milk
- 1 tsp palm shortening or butter
- 1/8 tsp cinnamon
- 1/2 tsp vanilla
Instructions:
- Preheat oven to 350 degrees F.
- Mix together the dry ingredients in a small bowl.
- In the bowl of a stand mixer, combine the maple syrup, pumpkin, egg and vanilla.
- Slowly incorporate the dry ingredients into the wet while the mixer is running.
- Scoop golf ball sized amounts of dough onto a lined cookie sheet. Press down lightly with your palm to flatten them a bit.
- Bake for 18 minutes at 350 degrees. Let them cool completely.
- While the cookies are cooling, make the icing by pureeing all of the ingredients in a blender or a small food processor. Leave at room temperature until you are ready to frost the cookies.
