Easy Sweet Potato Breakfast Casserole
I have definitely been in a breakfast slump lately so this casserole recipe came my way at the perfect time. There isn't much I can eat for breakfast other than eggs so whenever I can find a way to spice that up I am game. It's funny how I end up eating left-over veggies for breakfast along with the eggs and it is so delicious! I never thought I would eat vegetables for breakfast except maybe in an omelet. This casserole makes all of that not seem so strange! It is incredibly filling and I love waking up and already have breakfast ready and waiting. Mornings around here are so busy and I find myself running out without having eaten anything which is so bad! I have no excuses with this delicious casserole in my fridge. It would also be a great addition to a brunch with friends or weekend company!

- 2 tbs fat of choice (coconut oil, butter, ghee) melted
- 1 large sweet potato, diced
- 1/2 tsp sea salt
- 1 1/2 lbs breakfast sausage
- 1/2 yellow onion, diced
- 2 cups chopped spinach
- 10 eggs, whisked
- 1/2 tsp salt
- 1/2 tsp garlic powder
Instructions:
- Preheat oven to 400 degrees. Grease a 9x12 baking dish.
- Toss the diced sweet potatoes in fat and sprinkle with salt.
- Place sweet potatoes on baking sheet and bake for 20-25 minutes, until soft.
- While they are cooking, place a large pan over medium heat. Add the sausage and yellow onion. Cook until no pink remains in meant.
- Place meat mixture in baking dish, add sweet potatoes and spinach. Then add eggs along with salt and garlic powder. Mix until well combined.
- Place in oven and bake for 25-30 minutes, until eggs are set in the middle.
