Soft & Chewy Double Chocolate Cookies
When you are looking for a chocolate fix, look no further. These cookies are incredible! Perfect chocolatey texture with no flour at all! I can't even tell you how many times we have made these cookies. They taste like brownies and are completely irresistable fresh out of the oven.

- 1 cup thick almond butter
- 1 cup coconut sugar
- 1 egg, whisked
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- pinch of sea salt
- 1/4 to 1/2 cup chocolate chips (optional)
Instructions:
- Preheat oven to 350 degrees.
- In a large bowl, mix together almond butter and coconut sugar. Next add the egg and mix again until well combined.
- Add 1/4 cup cocoa powder at a time. Dough will be very thick and you might want to use your hands to incorporate the cocoa powder.
- Add the baking soda, vanilla, salt and chocolate chips. Combine until everything is well mixed. It should be very thick dough at this point.
- Scoop 2 tablespoons of dough and make into a round ball. Place on parchment paper lined baking sheet.
- Use a fork to press down gently on the cookies.
- Bake for 10 minutes.
- Remove from oven and let cook for 5-10 minutes. Don't try to remove early because they will fall apart.
