Stuffed Sweet Potatoes

This might be my new favorite dish.  It is simple to make, very flavorful and so filling.  Not to mention my entire family digs it too so there is no complaining at meal time!  I have seen stuffed sweet potato recipes in the past but for some reason this past week it sounded really good.  I already had my Crock Pot Pulled Pork cooking away so I decided to throw a few sweet potatoes in the oven at 350 degrees F for 2 hours. Once they were done, I added the pulled pork on top and drizzled with some tasty homemade barbecue sauce.  We paired it with roasted broccoli and had a fantastic meal!

Ingredients:

  • 4 medium sized sweet potatoes
  • 1 recipe of crock pot pulled pork
Sauce:
  • 1 cup tomato sauce
  • 1/2 cup honey
  • 1/4 cup white vinegar
  • 2 tbs tomato paste
  • 1 tbs coconut sugar 
  • 1 tbs coconut aminos
  • 3/4 tsp natural liquid smoke
  • 1/2 tsp sea salt
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp dijon mustard
  • 1/4 tsp cayenne pepper
  • 1/4 tsp minced garlic
  • 1/4 tsp onion powder
  • 14 tsp allspice
  • 1/4 tsp black pepper

Instructions:
  1. Place all ingredients in a saucepan set over medium-high heat and whisk to combine.
  2. Bring to a boil, then reduce the heat and simmer for 30 to 40 minutes, until the sauce has reduced by about half.
  3. Bring to room temperature before storing in the fridge for later use.
