Cucumber Pineapple Salsa
After recently visiting a popular restaurant and devouring a pineapple cucumber salsa I knew this would be something we would be eating on a regular basis at home. The only problem is putting the bowl down! It is so easy to eat and could be served with chips or even grilled chicken or shrimp. The recipe was pretty simple to duplicate at home and you can change it up depending on how sweet you like your salsa or by adding more cilantro or even a little jalapeno.
Ingredients:
- 2 cups chopped pineapple
- 1/4 cup pineapple juice
- 1/2 cup diced cucumber
- 1/8 cup lime juice
- 2 pinches of cilantro (or more!)
- pinch of sea salt
- pinch of stevia (optional)
Directions:
- Drain all juice from the pineapple into a bowl. Keep 1/4 cup of the juice for later.
- Measure and combine the pineapple, pineapple juice, lime juice, cucumber, cilantro, sea salt and sugar into a blender.
- Blend the mixture evenly for 20 seconds until salsa is slightly chunky.
- Serve cold.
