Banana Bread (gluten, refined sugar, and dairy free)





This banana bread is a recipe that has won over many non-paleo family members!  It tastes even better than the banana bread we used to make and is ten times healthier.  It is pretty simple to make and I have turned it into mini-loaves and even banana muffins if we are traveling or on the go. You can play around with the amount of sweetener in the recipe depending on the ripeness of your bananas. Hope you enjoy this recipe that is a staple in our house.



Ingredients:

  • 2 mashed bananas
  • 4 beaten eggs
  • 1/2 cup raw honey
  • 3 tbs melted coconut oil
  • 1/2 tsp vanilla liquid stevia
  • 1/2 tsp sea salt
  • 1 tsp cinnamon
  • 1/4 cup tapioca flour
  • 1/2 coconut flour, sifted
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup chopped walnuts(optional)

Directions:
  1. Mix all ingredients well in a large bowl.
  2. Bake at 350 degrees for 50-60 minutes
  3. Top with melted butter or ghee
