Paleo Chocolate Chunk Salted Carmel No-Bake Cookies
At Easter this year I was watching everyone around me enjoying tons of chocolate. It was driving me crazy! I don't usually feel that way but for some reason I was having a major moment of weakness. I needed to bake something so I wouldn't be completely tempted to raid some sweet little kids Easter basket! I found this recipe and couldn't wait to share. They are so stinking good!!! A gooey mixture of salted caramel and chocolate. Wow! I have already made them 3 times and am sort of embarrassed to admit that. Oh well. I know once you try them you will be addicted too!

- 1 1/2 cups coconut sugar
- 1/2 cup coconut oil
- 1/2 cup coconut milk (from the can)
- 2 tsp vanilla extract
- 1/4 tsp sea salt
- 2 1/2 cups finely shredded coconut (unsweetened)
- 1 cup big flake coconut (unsweetened)
- 2/3 cup dark chocolate chunks or chocolate chips
- 1/2 cup almond or cashew butter
Directions:
- In a large saucepan, combine the coconut sugar, coconut oil, and coconut milk. Bring the mixture to a boil and boil for 2-3 minutes until the caramel thickens. Stir constantly to keep the caramel from sticking.
- Remove the caramel from the heat and add the vanilla, sea salt and coconut. Stir to combine. Add in the nut butter, and mix it thoroughly.
- Let it cool for a few minutes.
- Finally, add the chocolate chunks and combine. Stir as little as possible to keep the chocolate intact.
- Portion the cookie on the parchment lined baking sheet and let them cool. They take about 3-4 hours to fully set up but you don't have to wait that long to enjoy since they are really good warm and gooey!
