Paleo Thin Mints
These little cookies are every bit as good as the girl scout thin mints but without all of those unhealthy ingredients! My husband has a serious weakness for thin mints. I knew last year for Valentine's Day I wanted to surprise him with these delicious cookies. They were not hard to make at all but they all got eaten in a matter of minutes. I will say that the whole house smelled like a wonderful peppermint factory so I am not sure how much I was actually able to surprise him! They also freeze well which was great since that is the way my darling hubby prefers to eat them.

- 1 cup almond flour
- 1 tsp coconut flour
- 2 Tbs cocoa powder
- 1/8 tsp sea salt
- 1/4 tsp baking soda
- 2 Tbs palm shortening
- 1/4 cup honey
- 1 tsp peppermint extract
- 6 ounces chocolate chunks
- 1 tsp peppermint extract
Directions:
- In a food processor, combine the almond flour, coconut flour, cocoa powder, baking soda and salt.
- Pulse in shortening, honey, and peppermint extract until dough forms.
- Roll out the dough between 2 pieces of parchment paper to 1/8 inch thick.
- Freeze dough for 15 minutes.
- Using a 2 inch cookie cutter, cut out dough.
- Transfer circles to a parchment lined baking sheet.
- Bake at 350 degrees F for 4 minutes.
- Cool completely on baking sheets, then freeze for 1 hour.
- Melt chocolate and peppermint extract in a small saucepan over very low heat.
- Dip each cookie in chocolate, then place on parchment lined plate.
- Transfer plate to freezer for 1 hour.
- Serve!
