Chocolate Chip Cookies Part 2.....
I am not sure what it is, but I have been completely obsessed with chocolate chip cookies lately. I posted another chocolate chip recipe a month ago and it is a good one. Considering how many times I have made these in the past 10 days I think they are my new fave. It is pretty dangerous how quick and easy you can make them. The other problem is that one batch only makes 10-12 cookies so that is a good excuse to make them daily, right? They are crumbly right out of the oven so make sure to let them cool a bit. I know that seems like an impossible task but you will make a mess if you don't!
Ingredients:
- 1 cup almond flour
- 1/4 tsp baking soda
- pinch of salt
- 1/4 cup melted coconut oil
- 1 Tbs honey
- 1 tsp vanilla extract
- 1 Tbs almond milk
- 1/4 cup dairy-free chocolate chips
Directions:
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. In a large bowl, mix together the coconut oil, honey, vanilla and almond milk. In a separate bowl whisk together the almond flour, salt and baking soda. Add the dry ingredients into the wet and stir to combine. Fold in the chocolate chips.
- Scoop a tablespoon of dough onto the baking sheet and form into a circle. Bake for 8-12 minutes until the bottoms are golden. Let cool for 5 minutes and then transfer to a wire rack to cool completely.
