Raspberry Chia Pudding

I tried so many times to perfect a non-dairy yogurt. I REALLY missed yogurt.  No matter how many recipes I tried or how many techniques I found, they never came out right.  I eventually gave up. That is until I found this raspberry chia pudding recipe.  Not only does it have a yogurt consistency, but it tastes like a creamy dessert from heaven!  It is easy to make and you can substitute the fruit with blueberries, or cherries and it is just as delicious!  


Ingredients:

1 15 oz can coconut milk

1/4 cup chia seed

1 1/2 cups fresh or frozen raspberries

1 tsp almond extract

1 tsp vanilla extract

Liquid stevia (to taste)

Blend all ingredients together.  Refrigerate at least 2 hours before serving.
