Paleo Granola
This paleo granola is totally addicting. I have been making it weekly and can't stop eating it. Yup, it is becoming a problem! It is perfect for traveling and I love having some in my car when I get hungry. The recipe is very forgiving and you can add different nuts and seeds to your liking. It is full of healthy fats and good protein. While I usually eat it plain, it would also be great used as a breakfast cereal.
Ingredients:
1 cup raw cashews
1 cup raw almonds
1/2 cup raw pecans
1/8 cup flax seeds
1/2 cup unsweetened coconut flakes
1/4 cup coconut oil
1/2 cup raw honey
1 tsp vanilla extract
1 tsp sea salt
1 cup dried fruit or raisins
Directions:
1. Preheat oven to 275 F. Place the almonds, cashews, pecans and coconut flakes in blender. Pulse a few times to break into smaller chunks.
2. Microwave the honey, vanilla and coconut oil together for 30-45 seconds. Add the seeds, nuts and coconut flakes. Stir to coat.
3. Spread the granola evenly on a baking sheet lined with parchment paper. Cook for 20-25 minutes or until lightly browned, stirring once or twice. Remove from heat and add salt and dried fruit. Press the mixture together to form a flat surface. Allow to cool for at least 20 minutes then break into chunks.
