Easy Egg Roll in a Bowl
The egg roll in a bowl has become one of my weekly staples. It takes only 10-15 minutes to whip up a batch and holds up all week long in the fridge for those quick meals. It is pretty versatile and I like to use ground turkey instead of the pork that the recipe calls for. Ground chicken would even be a good substitution. This is such a healthy meal and I hope you enjoy it as much as we do.
Ingredients:
- 1 lb ground pork, turkey or chicken
- 1 16oz bag of coleslaw mix
- 5 cloves minced garlic
- 1 tsp ginger, minced
- 1/3 cup coconut aminos
- 2 tbs sesame oil
- green onions for garnish
Directions:
- In a small bowl, combine the garlic, ginger, coconut aminos and sesame oil. Set aside.
- In a large skillet, brown the meat over medium-high heat.
- Add the shredded cabbage and carrots. Stir to combine.
- Add the sauce mixture to the meat and veggies. Stir and cook about 3-5 minutes, until the cabbage has just begun to wilt but is still crunchy.
- Garnish with green onions.
- Enjoy!
