Best Chocolate Chip Cookies




I am always on the look out for a new paleo chocolate chip cookie recipe that will blow your mind.  Well this baby is the new favorite in our house!  It is also low carb and has a few options for which sweetener you can use. I also love the addition of chopped pecans or walnuts.  Give these a try and let me know what you think!


Ingredients:

  • 1 1/4 cup almond flour
  • 1 tbs coconut flour
  • 1 1/2 tsp baking powder
  • 1/8 tsp sea salt
  • 2/3 cup sweetener of choice (I use a mix of coconut sugar and swerve sweetener)
  • 5 1/2 tbs butter, or palm shortening for dairy-free
  • 1/2 tsp vanilla extract
  • 1 large egg
  • 1/2 cup paleo chocolate chips (dairy, refined sugar free.  I use Lily's brand)
  • 1/4 chopped pecans or walnuts

Directions:
  1. Preheat oven to 325 F and line 2 baking sheets with parchment paper.
  2. In a large bowl with an electric mixer, cream butter and granulated sweetener until well combined.
  3. Add egg and vanilla extract to mixing bowl and mix until combined.
  4. In a separate bowl, combine almond flour, coconut flour, baking powder and sea salt.  Stir until combined.
  5. Add the dry ingredients to the wet ingredients and mix in until combined.
  6. Fold in chocolate chips and pecans.
  7. Place Tbs size spoonfuls across the cookie sheet 1 1/2 inches apart.
  8. Bake for 12-15 minutes, or until cookies are browned on the bottom.
  9. Remove and cool for at least 25 minutes, or until cookies firm up and set.
  10. Enjoy!
