Best Chocolate Chip Cookies
I am always on the look out for a new paleo chocolate chip cookie recipe that will blow your mind. Well this baby is the new favorite in our house! It is also low carb and has a few options for which sweetener you can use. I also love the addition of chopped pecans or walnuts. Give these a try and let me know what you think!
Ingredients:
- 1 1/4 cup almond flour
- 1 tbs coconut flour
- 1 1/2 tsp baking powder
- 1/8 tsp sea salt
- 2/3 cup sweetener of choice (I use a mix of coconut sugar and swerve sweetener)
- 5 1/2 tbs butter, or palm shortening for dairy-free
- 1/2 tsp vanilla extract
- 1 large egg
- 1/2 cup paleo chocolate chips (dairy, refined sugar free. I use Lily's brand)
- 1/4 chopped pecans or walnuts
Directions:
- Preheat oven to 325 F and line 2 baking sheets with parchment paper.
- In a large bowl with an electric mixer, cream butter and granulated sweetener until well combined.
- Add egg and vanilla extract to mixing bowl and mix until combined.
- In a separate bowl, combine almond flour, coconut flour, baking powder and sea salt. Stir until combined.
- Add the dry ingredients to the wet ingredients and mix in until combined.
- Fold in chocolate chips and pecans.
- Place Tbs size spoonfuls across the cookie sheet 1 1/2 inches apart.
- Bake for 12-15 minutes, or until cookies are browned on the bottom.
- Remove and cool for at least 25 minutes, or until cookies firm up and set.
