Mexican Fried Ice Cream

Recently we celebrated our son's adoption day and he requested something with a crispy cinnamon- sugar tortilla.  He had no idea I was planning on taking it to a whole other level!  He absolutely loves ice cream so I figured why not combine that with a crispy cinnamon sugar tortilla?  I will be honest, I took a few short cuts with this recipe to save time but it wouldn't be difficult to make it all from scratch if you so desired!  I used So-Delicious coconut milk ice cream and also their brand of coconut whipped cream.  For the tortilla bowl we used Mission Brand gluten free tortillas.
It was easy to whip it up for an amazing and delicious desert.  The best part, the ice cream isn't even fried!  It is just rolled in any gluten-free cinnamon flavored cereal of your choice.  Easy Peasy! 





Ingredients:

Tortilla-
  • 4 gluten free tortillas
  • 1-2 tbs of melted butter
  • 1/4 cup of sugar or coconut sugar mixed with 1 tsp of cinnamon
  • medium sized bowls or ramekins


Directions-
  1. Preheat oven to 350 degrees F.
  2. Spray each bowl lightly with a non-sick cooking spray.
  3. Microwave each tortilla for 8-10 seconds (this makes them easier to place in the bowls without tearing).
  4. Lightly brush both sides of the tortilla with melted butter and sprinkle with the cinnamon sugar mixture.
  5. Place each tortilla in a bowl, gently filling the bowl and folding them where needed.
  6. Press the center of each tortilla to make a flat bottom.
  7. Place bowls in oven on middle rack and bake for 15 minutes or until crisp and golden brown.
  8. Remove from oven, let stand for 2-3 minutes and then remove the tortillas from the bowls.  
  9. Place the bowls on parchment paper to finish cooling.

Ingredients:

Ice Cream-
  • 4 large scoops of dairy-free ice cream
  • 2 cups of gluten-free cinnamon cereal (we used chex)
  • coconut whipped cream
  • 1/4 cup no sugar added strawberry preserves (warmed)

Directions:
  1. Scoop 4 large ice cream balls and place on a cookie sheet and put in the freezer for about 1 hour.
  2. Place the 2 cups of cereal in a medium sized bowl or Ziploc bag.  Place a scoop of the frozen ice cream in the cereal mixture and with your hands roll it until it is completely coated.
  3. Place the ice cream ball inside the cinnamon-sugar tortilla.  (or back in the freezer until you are ready to serve).
  4. Top with whipped cream, strawberry sauce or any other topping you desire.
