Steak Tips Hash







I have recently really started to enjoy roasted veggies for breakfast.  I know that seems weird, right? If you would have told me I would be eating vegetables for breakfast 15 years ago I would have laughed hysterically.  I am so thankful that with time and desire for greater health, my taste-buds have changed drastically.  This dish we usually enjoy for lunch or dinner but with a side of eggs it is amazing.  Don't skip the marinade step since it is what truly gives this dish a ton of flavor!  I usually put it together on my food prep-day and it lasts well in the fridge for the week.  


Ingredients:

Marinade-
  • 2 lbs steak tips
  • 1/2 cup olive oil
  • 1/3 cup coconut aminos
  • 2 garlic cloves, minced
  • 2 tsp dried parsley
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1/2 tsp pepper
  • 1/2 tsp red pepper flakes
Veggie Hash-
  • 3 cups diced sweet potatoes
  • 3 tbs melted ghee (or butter)
  • salt to taste
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 sweet onion, minced
  • 2 garlic cloves, minced
  • green onions for garnish


Directions:
  1. Place steak in a shallow bowl and whisk together the ingredients for the marinade.  Pour marinade over the steak tips.  Cover and place in the fridge to marinate for 8 hours.
  2. Preheat oven to 400 degrees F.  Line a baking sheet with parchment paper, toss sweet potatoes in melted ghee and sprinkle with salt.  Place evenly throughout the baking sheet.  Bake for 25-30 min, tossing them half way through to help brown on all sides.
  3. Place a large skillet over medium heat.  Add 1-2 tbs of ghee to the pan and once its hot, place the steak tips in the pan.  Cook on both sides for 2-3 minutes.  Place on plate and set aside.
  4. Add another 1-2 tbs of ghee to the pan and add the bell peppers and onions.  Toss and cook for about 10 minutes, until the onions are translucent and peppers are slightly browned.  Add garlic and cook for 2 more minutes.  Lastly, add the sweet potatoes and beef to the skill with the veggies and cook for another 2 minutes to warm everything through.  
  5. Garnish with green onions and serve!
