Bacon Broccoli Quiche

Here is another fantastic brunch recipe that is super filling and will impress everyone!  It is very easy to prepare ahead of time and just throw in the oven.  I love the combination of sweet potatoes and bacon and the broccoli is a great flavor that I would have never expected. Give this quiche a try and I can guarantee you will not be disappointed.



Filling:


  • 4 organic eggs, beaten
  • 2 cups unsweetened almond milk
  • 6 slices uncured bacon, cut into 1 inch pieces and cooked until crispy
  • 1/2 cup onion, sauteed in bacon fat
  • 3 scallion greens, chopped
  • 1 1/2 cups broccoli, steamed until tender
  • 1/2 ts sea salt
  • 1/2 tsp dry mustard

Crust:
  • 2 cups sweet potato, peeled and grated
  • 1/4 cup almond flour
  • 1 Tbs coconut oil, melted
  • 1/2 tsp sea salt


Instructions:

  1. Preheat oven to 375 degrees. Start by combining the sweet potato, almond flour, oil and salt in a mixing bowl until well mixed. Lightly oil the sides and bottom of a quiche pan with coconut oil. Spoon the mixture into 10 inch quiche pan and pat onto the sides and bottom of the pan.
  2. Cook bacon until crispy. Saute onion in bacon fat until tender. Drain excess fat and set aside.
  3. Steam the broccoli.  Spread the broccoli in bottom of the crust, sprinkle the bacon over the top of the broccoli. Combine the eggs, milk, salt, mustard, onions and scallions in a bowl and mix well.
  4. Pour over the top of the broccoli and bacon.
  5. Bake for 45 minutes or until the eggs are set.
