Snickers Ice Cream with Salted Caramel (Dairy/gluten free)

5 Ingredient snickers bars??!!! I know, right?  If I would have known that you can make a snickers bar with only 5 ingredients I would have made these YEARS ago!  They were so easy to make and topped the vanilla ice cream perfectly.  I must admit that we had to eat a few just by themselves too.  Snickers and a Coke were my favorite sugary treats that I have consumed too many of in my past.  The fact that I can have a candy bar again with such amazing flavor and not feel sick for days is a miracle!  I hope you enjoy these snickers bars as much as we have.

Ingredients:
  • 18-20 pitted dates (about 1 cup)
  • 1 cup raw walnuts
  • 1/4 cup Vegan Carmel Sauce
  • 1/4 cup roasted salted peanuts
  • 8 ounces chocolate, chopped (non-dairy, refined sugar free)
  • Vanilla Ice Cream Recipe (just omit the butter and the pecans)
Instructions:
  1. Pulse dates in a food processor until only small bits remain.
  2. Add walnuts and pulse until thoroughly mixed and a dough is formed.
  3. Transfer the dough to a small loaf pan lined with parchment paper and press into a square about 1/4 inch thick.  Once sliced, the dough should yield 8 small snickers bars.
  4. Put dough in the freezer to set for 5 minutes.
  5. Remove from freezer and transfer to a cookie sheet.  Carefully slice into 8 even rectangles.
  6. Top with caramel sauce and add peanuts. Put back in freezer for 15 minutes to harden.
  7. Ten minutes into freezing, melt the chocolate in a shallow bowl. When set, remove bars from freezer and carefully dip each one into the chocolate and scrape off excess with a rubber spatula. ( I just spooned mine on since it seemed easier)
  8. Place bars on a baking sheet lined with plastic wrap or parchment paper and place back in freezer to set for atleast 10 minutes. Store in the freezer or fridge to keep fresh until serving.
  9. To make a sundae, mash up some of the snickers bar and add it to your vanilla ice cream.  Drizzle with the salted caramel. Enjoy!
