Buckeyes (gluten/dairy free)
How can you possibly go wrong with peanut butter and chocolate? I know these little babies are usually found around the holiday season but I had such a craving for them and had no intention of waiting until December. Especially when I found this awesome recipe and realized they are way too easy to make! I knew it would mean trouble but I was willing to take the risk. They can be made with almond butter as well if you aren't able to tolerate peanuts and are still very good.

- 1 cup almond flour
- 1 cup natural peanut butter (or almond butter)
- 1 tbs honey
- 2 tsp vanilla
- 2 tsp coconut oil
- 1 cup Enjoy Life or Lily's Chocolate Chips
Instructions:
- Combine the almond flour, peanut butter, honey and vanilla.
- Roll the mixture into small balls and place on wax paper.
- Place in the freezer to harden for about one hour.
- Melt the coconut oil and chocolate chips in a small saucepan over low heat, continuously stirring. Be careful not to burn since it is easy to do.
- Using a toothpick, dip balls 3/4 way into the chocolate, leaving a small amount uncovered at the top.
- Place the balls back into the fridge or freezer to harden the chocolate.
- Enjoy!
