Maple Bacon Pork Tenderloin

This recipe is fantastic for those busy nights when you need dinner on the table quick.  We aren't a family that eats pork very regularly, but this recipe is certainly in the rotation.  The combination of maple and pork makes my mouth water just thinking about it!
We love to pair this with roasted broccoli and sweet potatoes. This pork tenderloin is a recipe that would also be great for that dinner party!


Ingredients:

  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 (1 1/2 lb) pork tenderloin
  • 4 slices bacon
  • 1/4 cup maple syrup
  • 3 tbs water
  • 2 tbs molasses
  • 1/8 tsp chili powder
  • 1/8 tsp sea salt

Instructions:
  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. In a small bowl, mix together the garlic powder, paprika, salt and pepper.  Pat the pork tenderloin dry, then coat the pork with the spice mixture, pressing it into the meat.
  3. In a large saute pan over medium heat, cook the bacon until crispy.  Remove from the pan and set aside on a paper towel.
  4. In the same pan over medium heat, sear the pork on all sides in the bacon fat, about 2 minutes per side.
  5. Place the seared pork on the lined baking sheet and put it in the oven to roast for 12 to 15 minutes, until it reaches the internal temperature of 145 degrees F.
  6. Cover the pork with foil and let rest for 3 to 5 minutes.  While the pork is resting, make the sauce.
  7. Place the saute pan over low heat and add the syrup, water, molasses, salt and chili powder.
  8. Mix together and simmer for 3 to 5 minutes, until thickened.  
  9. Chop the cooked bacon into small pieces and add to the thickened sauce in the pan.
  10. Pour the sauce over the pork.
  11. Slice and serve.
