Man-Pleasing Chicken
I am always bummed once winter arrives and the barbecue grill is safely tucked away. I struggle with how many different ways I can prepare chicken during those cold winter months! This recipe is only 5 ingredients and so simple. It is loved by my entire family and goes excellent with roasted vegetables and cauliflower rice.

- Chicken thighs- 1.5lbs
- 1/2 cup dijon mustard
- 1/4 pure maple syrup
- 1 tbs rice wine vinegar (or lemon juice if strictly paleo)
- fresh rosemary
- salt and pepper
Instructions:
- Preheat your oven to 450 F.
- Mix together mustard, maple syrup and vinegar.
- Put chicken in a foil-lined baking dish. Then sprinkle sea salt and pepper.
- Pour the mixture over the chicken, turning the thighs in the mixture so they are fully coated.
- Put the chicken in the oven and let them bake for 40 minutes or until meat thermometer reads 165 degrees F.
- Baste the tops of the chicken with the sauce half the way through.
- Let the chicken rest for 5 minutes before serving.
