Man-Pleasing Chicken

I am always bummed once winter arrives and the barbecue grill is safely tucked away.  I struggle with how many different ways I can prepare chicken during those cold winter months!  This recipe is only 5 ingredients and so simple.  It is loved by my entire family and goes excellent with roasted vegetables and cauliflower rice. 


Ingredients:

  • Chicken thighs- 1.5lbs
  • 1/2 cup dijon mustard
  • 1/4 pure maple syrup
  • 1 tbs rice wine vinegar (or lemon juice if strictly paleo)
  • fresh rosemary
  • salt and pepper

Instructions:
  1. Preheat your oven to 450 F.
  2. Mix together mustard, maple syrup and vinegar.
  3. Put chicken in a foil-lined baking dish. Then sprinkle sea salt and pepper.
  4. Pour the mixture over the chicken, turning the thighs in the mixture so they are fully coated.
  5. Put the chicken in the oven and let them bake for 40 minutes or until meat thermometer reads 165 degrees F.
  6. Baste the tops of the chicken with the sauce half the way through.
  7. Let the chicken rest for 5 minutes before serving.
