Pineapple Ice Cream (non-dariy, refined-sugar free)

This ice cream is now the 9th different recipe we have perfected. That is crazy! We sure do love our ice cream around here. It is pretty fun trying all of the recipes that I have found.  Of all the delicious ice creams we have made this is currently tied for my favorite along with the butter pecan.  It is the absolute perfect cold summer treat.  At first I thought it would taste like a pina colada but it really doesn't. The pineapple flavor is so dominant that you don't taste the coconut at all. Trust me, this ice cream does not disappoint!


Ingredients:

  • 1 pineapple, cored and sliced into chunks
  • 1 can full fat coconut milk
  • 1/2 lemon juiced
  • 1/4 cup maple syrup or raw honey
  • water to thin if necessary

Instructions:
  1. In a blender or vitamix, add all ingredients and process until smooth.
  2. Chill in the fridge for at least an hour.
  3. Put in ice cream maker and churn for approximately 20 minutes.
  4. Serve!
