Paleo Chocolate Chip Cookie Dough Ice Cream

The base of this ice cream is a standard vanilla that is creamy and very easy to eat.  Add in frozen cookie dough and now we are really talking!  I used this recipe for the cookie dough: Chocolate Chip Cookies but any of your favorite cookie dough recipes would work great!  The ice cream base is really easy to make and we add in whatever ingredients we are in the mood for on that particular day.


Ingredients:

Ice Cream

  • 1 can full fat coconut milk (13.5 oz)
  • 1 large egg
  • 2 tbs arrowroot powder
  • 3 tbs raw honey ( I used slightly less and added a small amount of vanilla stevia)
  • 1 1/2 tsp vanilla extract
  • pinch of sea salt
  • 2 tbs chocolate chips


Directions:

  1. Make cookie dough per your favorite recipe's instructions. 
  2. Refrigerate cookie dough until firm, then chop into small pieces.
  3. Combine the coconut milk, egg, arrowroot powder, honey and salt in a saucepan and slowly bring the mixture to a light boil stirring constantly.
  4. Let cool for 5 minues, then mix in the vanilla extract and refrigerate at least 2 hours.
  5. Mix the chopped cookie dough and chocolate chips with the chilled ice cream.
  6. Freeze mixture in an ice cream maker approximately 20 minutes.
  7. Store in an airtight container.
