Blueberry Ice Cream
Blueberry week continues and what a better way than with a cold, refreshing treat! Ok, maybe just another excuse to make more ice cream but I seriously have more blueberries than I know what to do with! My freezer is only so big.....
I have made so many different flavors that creating this recipe was pretty simple. It is easy to make with any type of fruit and the blueberry and lemon combination is super tasty! Hope you enjoy!
Ingredients:
- 1 can full fat coconut milk
- 2 cups fresh blueberries
- 2 tbs maple syrup
- 3 tbs lemon juice
- 2 tsp lemon zest
- 1 tbs vanilla extract
- 6-8 drops vanilla liquid stevia (optional)
Directions:
- In a blender, combine all ingredients and blend until smooth, about 1 minute.
- Pour contents into an ice cream machine and church for 15-20 minutes until desired firmness is achieved.
- Store in airtight container.
