Veggie Salsa

We just had this salsa last weekend at a party we attended. I seriously could not stop eating it!  I finally had to walk away from the bowl since there was no self control. It is the perfect combination of veggies with a little fruit to bring out all of the wonderful flavors.  You can really change the recipe to suit your personal preferences.  We used less fruit and a lot more cilantro than the recipe called for.  What can I say we love our cilantro! With summer right around the corner this would be a perfect addition to grilled chicken or salmon.

Ingredients:
  • 1 cucumber 
  • 1 red bell pepper
  • 1 medium onion
  • 3 cups diced peaches (fresh or canned in water or juice)
  • 1 can crushed pineapple (or fresh)
  • 2 Tbs cilantro
  • 1/2 cup white vinegar
  • 1 jalapeno pepper (optional)


Directions:

  1.  Dice all veggies and fruit.
  2.  Mix together in large bowl.
  3. Add vinegar and chill.
  4. Enjoy!
