Pasta Fagioli (gluten-free, dairy-free, refined sugar-free)
This soup used to be my absolute favorite whenever we went to the Olive Garden. It is so yummy and filling! I loved dipping their bread sticks in the soup so it was a must for me to make an easy gluten-free Italian bread to go along with it. I will post the recipe later for the bread since it is literally a 5 minute recipe! This recipe is a great copycat of that pasta fagioli soup and is much healthier with no sugars, dairy or gluten.
Ingredients:
- 1 lb ground beef
- 6 oz diced onion
- 7 oz slivered or diced carrots
- 7 oz diced celery
- 24 oz diced tomatoes
- 1 cup cooked red beans
- 1 cup cooked white beans
- 44 oz beef stock
- 1 1/2 tsp oregano
- 2 1/2 tsp parsley
- 24 oz spaghetti sauce (with no added sugars)
- 4 oz dry pasta (gluten free)
Directions:
- Cook beef, onions, carrots, celery and tomatoes and simmer for 10 minutes.
- Drain the beans and add to the pan with other ingredients.
- Add the broth, oregano, parsley,spaghetti sauce and pasta to the pan and simmer on medium for 20 minutes or until pasta is tender.
- Enjoy!
