Pasta Fagioli (gluten-free, dairy-free, refined sugar-free)


This soup used to be my absolute favorite whenever we went to the Olive Garden.  It is so yummy and filling! I loved dipping their bread sticks in the soup so it was a must for me to make an easy gluten-free Italian bread to go along with it. I will post the recipe later for the bread since it is literally a 5 minute recipe!  This recipe is a great copycat of that pasta fagioli soup and is much healthier with no sugars, dairy or gluten.


Ingredients:
  • 1 lb ground beef
  • 6 oz diced onion
  • 7 oz slivered or diced carrots
  • 7 oz diced celery
  • 24 oz diced tomatoes
  • 1 cup cooked red beans
  • 1 cup cooked white beans
  • 44 oz beef stock
  • 1 1/2 tsp oregano
  • 2 1/2 tsp parsley
  • 24 oz spaghetti sauce (with no added sugars)
  • 4 oz dry pasta (gluten free) 

Directions:
  1. Cook beef, onions, carrots, celery and tomatoes and simmer for 10 minutes.
  2. Drain the beans and add to the pan with other ingredients.
  3. Add the broth, oregano, parsley,spaghetti sauce and pasta to the pan and simmer on medium for 20 minutes or until pasta is tender.
  4. Enjoy!
