Paleo Blender Bread




This bread is hands down the favorite in our house.  I can't believe how incredibly easy it is to make! It only has 7 ingredients and they are all thrown into the blender at once.  I love the simplicity and not having to clean up 5 bowls!  It is free of grains/dairy/gluten/and refined sugars.  It makes a very large loaf and looks just like a regular slice of bread. Ingredients:

  • 8 eggs
  • 1/2 cup unsweetened almond milk
  • 4 tsp apple cider vinegar
  • 3 cups raw cashews
  • 7 tbs coconut flour
  • 2 tsp baking soda
  • 1 tsp sea salt

Directions:
  1. Preheat the oven to 325 degrees. For a white colored loaf, place a small dish of water on the bottom rack.
  2. Line the bottom of a loaf pan with parchment paper, then spread a very thin coating of coconut oil on the sides of the pan.
  3. Place all ingredients in a high speed blender and blend until smooth.
  4. Immediately pour batter into prepared loaf pan and put in the oven.
  5. Bake for 60-70 minutes or until toothpick comes out clean.
  6. Remove from the oven and cool for 15-20 minutes.  Use a knife to free the loaf from the sides of the pan. Place upside down on a cooling rack and cool for one hour.
  7. Wrap tightly and store in the fridge.
