Paleo Beef Jerky


Store bought beef jerky is one of those items that is loaded with many unhealthy ingredients.  We recently went on a trip and I was really just wanting to make it easy on myself and buy it instead of making it. There are some brands of paleo beef jerky you can buy but I would have had to order it online and it was very expensive.  My sister in law has told me how easy it is to make and she does it for her family. So I decided to give it a try.  I didn't want to make it very seasoned or spicy since my son wouldn't like that so I stuck with a very basic recipe to start but it certainly didn't taste basic! It had so much flavor to it and everyone loved it. In fact, we were always fighting over who gets the last piece!  There are many other recipes out there with different flavors but this one is a great way to start.  I stored it in the refrigerator and it lasted about two weeks and still tasted as delicious as it did the first day.


Ingredients:

  • 3 lbs flank steak (as lean as possible)
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 cup coconut aminos
Instructions:
  1. Partially freeze the meat for 2-4 hours, until mostly solid. This makes it very easy to slice.
  2. Slice meat into 1/10th inch thickness strips.
  3. Mix the coconut aminos with the spices in a bowl.
  4. Toss the sliced beef with the coconut aminos and spices.
  5. Marinate meat for 2-24 hours in the fridge.
  6. Lay strips of beef on dehydrator racks.
  7. Dehydrate at 170 degrees for 3-4 hours.
  8. Closely monitor meat as to not over cook.
