Twice Baked Breakfast Sweet Potatoes
I will be the first to admit that this dish doesn't appear very impressive at first glance. What might be lacking in presentation is more than made up for with flavor. I have been craving sweet potatoes lately and this combination with bacon, garlic, onion and eggs is crazy good. I had no idea that bacon and sweet potatoes complemented each other so well. And let's be honest, I will take any excuse to eat more bacon! This dish is very simple to make and I can see how baking the sweet potatoes the night before would make for a quick and easy breakfast.

Ingredients:
- 2 medium sweet potatoes
- 4 slices bacon
- 1 medium sweet onion, diced
- 4 garlic cloves, minced
- sea salt and black pepper
- 4 small eggs
Directions:
- Heat oven to 400 degrees. Poke sweet potatoes with a knife a couple of times then place directly onto the oven rack. Cook for 45 minutes or until soft. Remove and let cool.
- In a large skillet, fry bacon until crispy. Remove and toss in onion and garlic in leftover bacon grease. Cook for about 5-7 minutes.
- After bacon cools, cut into small pieces.
- Once the sweet potatoes are cool, cut lengthwise then scoop out the middle of the sweet potato.
- Mash the sweet potato into the skillet and cook for 10 minutes with the onions and garlic.
- Stir in the salt, pepper and half of the chopped bacon.
- Place the sweet potatoes on a baking sheet lined with parchment paper.
- Scoop mash into the potato shells then create a large divot for the egg. You will want to make sure the divot is beg enough to fit the egg.
- Break one egg into eat divot then sprinkle with remaining bacon. Cook for 15 minutes or until yoke is set.

Hi Crystal! We buy our bacon from Meijer. I buy the Hormel since it is free of gluten, nitrates,nitrites and no refined sugars. It goes on sale occasionally and I stock up and keep it in the freezer!
