Twice Baked Breakfast Sweet Potatoes

I will be the first to admit that this dish doesn't appear very impressive at first glance.  What might be lacking in presentation is more than made up for with flavor.  I have been craving sweet potatoes lately and this combination with bacon, garlic, onion and eggs is crazy good.  I had no idea that bacon and sweet potatoes complemented each other so well. And let's be honest, I will take any excuse to eat more bacon! This dish is very simple to make and I can see how baking the sweet potatoes the night before would make for a quick and easy breakfast. 


Ingredients:

  • 2 medium sweet potatoes
  • 4 slices bacon 
  • 1 medium sweet onion, diced
  • 4 garlic cloves, minced
  • sea salt and black pepper
  • 4 small eggs

Directions:
  1. Heat oven to 400 degrees. Poke sweet potatoes with a knife a couple of times then place directly onto the oven rack. Cook for 45 minutes or until soft. Remove and let cool.
  2. In a large skillet, fry bacon until crispy.  Remove and toss in onion and garlic in leftover bacon grease. Cook for about 5-7 minutes.
  3. After bacon cools, cut into small pieces.
  4. Once the sweet potatoes are cool, cut lengthwise then scoop out the middle of the sweet potato. 
  5. Mash the sweet potato into the skillet and cook for 10 minutes with the onions and garlic.
  6. Stir in the salt, pepper and half of the chopped bacon. 
  7. Place the sweet potatoes on a baking sheet lined with parchment paper.
  8. Scoop mash into the potato shells then create a large divot for the egg. You will want to make sure the divot is beg enough to fit the egg.
  9. Break one egg into eat divot then sprinkle with remaining bacon. Cook for 15 minutes or until yoke is set.

  2. Hi Crystal! We buy our bacon from Meijer. I buy the Hormel since it is free of gluten, nitrates,nitrites and no refined sugars. It goes on sale occasionally and I stock up and keep it in the freezer!
