Primal Nut Bars



After being inspired by a good friend who made a similar treat yesterday, I just had to post these.  We have tried quite a few protein/granola bar recipes. My husband is a runner so it is always nice having a treat like this for him to eat post-run.  These primal nut bars are my favorite hands down.  They are very easy to make and they are great when we travel and need to take healthy snacks. The recipe is also very forgiving with the type of nuts you use. No matter what combination I have on hand, they always taste amazing!


I struggled to find dried fruit that had no added sugar but finally found these Eden oganic cranberries.  They also carry dried cherries and both kinds are apple juice sweetened. I love them! I can find them locally at Something better or Horrocks now as well.


Ingredients:
  • 1 cup slivered almonds
  • 1 cup pecans
  • 1/2 cup almond or coconut flour
  • 1/2 cup of unsweetened dried coconut
  • 1/2 cup almond butter
  • 1/2 cup coconut oil
  • 1/4 cup honey
  • 2 tsp pure vanilla extract
  • 1/2 tsp salt
  • 1 cup dried fruit

Directions:
  1. Preheat oven to 350 degrees F. Toast the nuts until golden brown, stirring occasionally. Watch them carefully since they can burn quickly.
  2. Once the nuts are toasted, put them in a food processor and give them a few pulses until they are a course meal.
  3. Stir the nuts into the almond/coconut flour and shredded coconut. 
  4. In a microwave safe bowl, warm up the coconut oil and almond butter for about 20 seconds.
  5. Stir them together and then mix in the honey, vanilla and salt until creamy.
  6. Fold the nut mixture into the honey mixture and then add the fruit.
  7. Pat into an 8x8 baking dish. Sprinkle the top with shredded coconut. Place in the fridge for an hour or until nice and solid.
  8. Cut into squares
  9. Store in the fridge
