Healthy No Bake Cookies


I know what you are thinking. How can you possibly call these cookies healthy? I promise you they are so much better than the no-bakes of our past!  With just a few simple substitutions, these cookies will blow you away. I warn you that you won't be able to stop eating them! This was one of the first cookies we started making and introducing to our family and friends without telling them it was a "healthy" version. Honestly, most couldn't even tell and now request these when they come for a visit!


Ingredients:
  • 2/3 cup raw honey or pure maple syrup
  • 1/4 cup coconut oil
  • 5 Tbs cocoa powder
  • 1/2 cup natural peanut butter (or almond butter)
  • 1 tsp vanilla
  • 1 cup shredded coconut (unsweetened) or gluten free oats
Directions:

  1. Over medium heat, combine the maple syrup, coconut oil and cocoa powder
  2. Bring to a boil, stirring constantly, and turn down heat to a simmer. Stir constantly for 3 minutes and then remove from heat.
  3. Stir in nut butter. vanilla and coconut or oatmeal
  4. Place one tablespoonful at a time onto parchment paper and put in the refrigerator to set up. (about 30 minutes)
