Easy Omelettes To Go





This recipe is perfect for a quick breakfast on the go. One of the things I really love is that you can customize it for each family member by adding different veggies in each one!  They cook up in less than 20 minutes and store great in the refrigerator. Our son really likes having these in his lunch box and I have no complaints. I know he is getting some vegetables and protein and it is an easy thing to prepare the night before.  I have taken these babies to a few woman's gatherings and they area always a huge hit.

Ingredients:


  • 12 slices nitrite/nitrate free ham ( we buy Hormel since it is also gluten free)
  • 12 eggs
  • sea salt to taste
  • optional- bell peppers, spinach, onions, mushrooms

Directions:

  1. Preheat oven to 350 degrees F
  2. Line a standard muffin tin with slices of ham
  3. in a bowl whisk remaining ingredients
  4. Pour egg mixture into ham lined muffin cups
  5. Bake until eggs are set, about 15 to 18 minutes
