Soft & Chewy Double Chocolate Cookies

When you are looking for a chocolate fix, look no further.  These cookies are incredible!  Perfect chocolatey texture with no flour at all!  I can't even tell you how many times we have made these cookies. They taste like brownies and are completely irresistable fresh out of the oven.  


Ingredients:

  • 1 cup thick almond butter
  • 1 cup coconut sugar
  • 1 egg, whisked
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • pinch of sea salt
  • 1/4 to 1/2 cup chocolate chips (optional)

Instructions:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, mix together almond butter and coconut sugar. Next add the egg and mix again until well combined.
  3. Add 1/4 cup cocoa powder at a time.  Dough will be very thick and you might want to use your hands to incorporate the cocoa powder.
  4. Add the baking soda, vanilla, salt and chocolate chips. Combine until everything is well mixed. It should be very thick dough at this point.
  5. Scoop 2 tablespoons of dough and make into a round ball. Place on parchment paper lined baking sheet. 
  6. Use a fork to press down gently on the cookies.
  7. Bake for 10 minutes.
  8. Remove from oven and let cook for 5-10 minutes.  Don't try to remove early because they will fall apart.
